CNY – Yu Sheng Steps

Every Chinese New Year, no celebratory meal or reunion dinner is complete without “tossing up good fortune” i.e Yu Sheng Lo Hei. You can take the hassle of preparing it yourself and just order from the many caterers that include it in their CNY menu offerings. Buy it on its own or include it in your catering order, all you have to do is to follow these steps to ensure good fortune ahead. Remember, the higher you toss, the more abundant your fortunes will be!

1. Arrange slices of fish (usually smoked salmon)
SAY – Nian Nian You Yu 年年有余 (Abundance Every Year)

2. Add pomelo or squeeze lime over
SAY – Da Ji Da Li 大吉大利 (Good Luck & Great Prosperity)

3. Add pepper & five-spice powder
SAY – Zhao Cai Jin Bao 招财进宝 (Attract Wealth & Treasures)

4. Drizzle oil in a circular motion over the ingredients
SAY – Yi Ben Wan Li 一本万利 or Cai Yuan Guang Jin 财源广进 (Wealth to come from all directions and increase profits 10,000 times)

5. Add Julienned carrots (optional)
SAY – Hong Yun Dang Tou 鸿运当头 (Good luck is imminent)

6. Add Green Radish (optional)
SAY – Qing Chun Chang Zhu 青春常驻 (Forever young)

7. Next Shredded White Radish (optional)
Say – Feng Sheng Shui Qi 风生水起 (Progress at a fast pace) or Bu Bu Gao Sheng 步步高升 (Reaching higher level with every step)

8. Sprinkle chopped peanuts
Say – Jin Yin Man Wu 金银满屋 (May your house be filled with gold & silver)

9. Sprinkle sesame seeds
Say -Sheng Yi Xing Long 生意兴隆 (Flourishing business)

10. Scatter golden crackers
Say – Man Di Huang Jin 满地黄金 (May the whole floor be filled with gold)

11. Pour the sauce
Say – Tian Tian Mi Mi 甜甜蜜蜜 ( Sweet & loving relationships)

12. Toss!
Say – Huat ah!! 发啊! (Prosperity!)
